Boat noodles (ก๋วยเตี๋ยวเรือ) are a Central Thai dish of small bowls filled with dark, intensely seasoned broth, thin rice noodles, sliced meat, and herbs. They were originally sold from canal boats near Ayutthaya in the 1940s, which is how they got their name.
